That’s what the braising liquid surrounding the pork shoulders is

 doing. After an overnight in the oven, the pork is up just past 190F. Time for it to begin chilling. In fact that’s what we’ve been doing too, drinking coffee and chilling out on the deck in the chilly mountain air.
